Aviation American Gin, also known as Aviation Gin, is a brand of gin first produced in Portland, Oregon, by founders Christian Krogstad and Ryan Magarian in 2006. It is referred to as an “American dry gin”, meaning the taste profile is less strongly juniper flavoured than some other gins.
It all starts with our precise blend of botanicals – cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper, and two kinds of orange peel. The botanicals are suspended in a pure, neutral grain spirit for 18 hours in macerating tanks. The macerate is then pumped into a still along with pure water. Steam jackets heat the macerate, the vapors go into the condenser, which cools the vapors to form the gin distillate. In a meticulously monitored process, the first fluid leaving the still, the “heads,” is removed. Collecting the “heart of the spirit” throughout the run, the distillers then determine the end of the cycle and make the final cut, “the tails.” This process takes approximately 7 hours and at this point, the “heart cut” is 142 proof.
An interesting twist on Johnnie Walker Black Label, Double Black was rolled out for general release in 2011 after a successful launch in airport duty-free stores. Double Black adds to the normal Black Label profile by including more Islay whisky and casks that have been heavily charred, giving a more intense flavour with a greater emphasis on smoke while keeping true to the sophisticated Johnnie Walker style.
The flavour is full-bodied and complex with the signature Johnnie Walker peat smoke shining brightly through rich raisins and sultanas. Apples, pears and orange zest bring freshness while creamy vanilla and spice bring a softness and sweetness to the tongue.
